Black Bean Nuggets Recipe

These little black bean nuggets are so useful. I usually make a big batch and freeze half for later. You can put them on a burger bun with all the usual burger toppings, stuff them in a wrap with crunchy leaves and pickles or fry them up like hash-browns for breakfast.

I like to make nuggets rather than patties as they hold together better and you get more crispy surface. It also makes them more versatile. I usually soak and cook my own beans using my trusty Hot Bag from Sally's Good Things. But tinned work just as well. 


This is what you'll need from your pantry:

1 1/2 cup cooked quinoa

1 can black beans

1 tsp ground Cumin

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1 tsp salt

1/4 cup bread crumbs

1/4 cup atchar
